Providence

Chef Michael Cimarusti's Providence holds three Michelin stars for a tasting menu built almost entirely around sustainable seafood, sourced with the kind of specificity usually reserved for produce. It remains the restaurant most frequently cited as the anchor of the city's fine-dining reputation, and one of the hardest tables in Los Angeles to book on short notice.

n/naka

Husband-and-wife team Niki Nakayama and Carole Iida-Nakayama run n/naka around modern kaiseki, the multi-course Japanese tradition built on seasonal precision — each course arriving as much as a formal statement as a dish. Its Michelin star recognises a restaurant that has done more than almost any other in the city to introduce kaiseki dining to an American audience on its own terms rather than a simplified one.

Spago Beverly Hills

No restaurant did more to define modern Los Angeles dining than Spago. Opened by Wolfgang Puck in 1982 and relocated to its current Beverly Hills address in 1997, it is widely credited with popularising California cuisine — wood-fired pizzas and market-driven plates that broke from the heavier European fine-dining template of the era. Decades on, it remains a fixture of the city's dining culture and a natural pairing with a stay at The Beverly Hills Hotel or The Peninsula, both a short walk away.

Somni

Holding three Michelin stars, Somni pushes toward the more avant-garde end of the city's tasting-menu scene — a small, counter-driven format built around technique and surprise rather than the produce-forward restraint of Providence, giving Los Angeles two very different three-star philosophies within the same city.

Holbox

A Michelin-recognised Mexican seafood counter, Holbox represents the other half of Los Angeles's culinary identity — the city's deep Mexican culinary tradition elevated to tasting-menu precision rather than treated as a separate, casual category from its French- and Japanese-influenced fine dining.
