Quinary

Opened in 2012 on Hollywood Road, Quinary established founder Antonio Lai as one of Asia's defining mixologists and has remained a fixture on Asia's 50 Best Bars ever since. Its «texture series» builds cocktails around unexpected textures — delicate foams, gleaming metallic finishes — treating each drink as a small design object as much as a beverage.

The Mixing Room & the Iron Fairies Trilogy

Designer Ashley Sutton's Iron Fairies concept has expanded into a trilogy of Central bars, of which The Mixing Room is the most theatrical — rugged brick walls, dark timber, and a ceiling hung with thousands of vintage bottles, its cocktail programme built around fairy-tale characters rather than conventional menu categories.

Bar Leone

Named Best Bar in Asia in 2024 under bartender Lorenzo Antinori, Bar Leone brings an Italian neighbourhood-bar sensibility to Bridges Street — classic Italian cocktails served alongside simple, authentic dishes like mortadella sandwiches, a deliberate contrast to the more elaborate design concepts nearby.

Planning a Night Out

Central's bar scene rewards walking between venues rather than committing to one for the night, with Hollywood Road and its side streets holding several of the addresses above within a few minutes of each other. Ozone, given its location, is better treated as its own dedicated evening rather than one stop among several.
